Hi all, I had a lightbulb moment last night when I cooked a huge pot of chicken casserole for the family. I had so much left over but didn't want to use it again so soon (I know I could of frozen it but personally I don't like re heated big chicken chunks, just doesn't taste the same) and I had an idea to blend it with a hand blender to make a soup. We had the soup today for lunch and I have frozen the rest in 2 separate portions. The blended casserole made for a delicious soup!

These extra lunches will come in very handy with my son at home on summer holidays from nursery! Great for an instant lunch when we are run off our feet...

Great tip hon!

Another thing you can do with leftover casseroles is put them in a pie dish, and then top with pastry and bake for a meat pie.
