Please post a recipe for a lovely moist wheat free fruit cake, if you have one :-) My husband loves fruit cake ( I have never made one) but is not great with wheat. Thanks.

Hi Elia

1 cup fruit (mixed)
1 cup sugar
1 cup water
4oz margarine
1 teasp bicarb of soda
1 teasp mixed spice
Place all in a saucepan, bring to simmer for 10 mins then allow to cool until just warm (30 min approx)

Add 2 cups of self raising flour (you can buy gluten free self raising flour in big supermarkets, it will be wheat free) and 1 egg. Mix everything together an pour into a greased and lined cake tin (8" I think) cook at 180C, 350F, or gas 4 for 1-1.5 hours until a knife comes out clean.
