What's for dinner tonight?
Let's see what we're all cooking on what is an exceptionally windy day in my part of the country!!!
Tonight I'm cooking sausage casserole - well, strictly speaking I'm cooking it today because I'm making it in my slow cooker. It's my 3 year old ds's first full day at pre-school and my dd's first day back at school, followed by a swimming lesson so I want something ready for when they come in tired and grumpy!
If ds eats early I can put him into his pyjamas and hopefully he'll fall asleep (hopefully!)

The smell of sausage cassole in the slowcooker is the best! Tonight we're having risotto stuffed peppers.

Ooh yum that is one of my favourite meals - even the children love stuffed peppers which is a bonus. The sausage casserole was lovely, I put Quorn sausages in for me as they are lower in fat and I actually prefer them to meat sausages unless I've been to buy very expensive ones from the butcher!
It was lovely to get in with two tired children and be able to put dinner in front of them!!!

I always think it's weird, stuffed peppers sound like a meal anyone would take or leave but whenever we have them I just want to eat them all the time! I am going through a bit of a phase where I want to eat pine nuts with everything so chucking a few of them in with the rice just made them more desireable!
I love using the slowcooker, so good when you just want to press the easy button and have everything ready to go. Quorn sausages are pretty nice aren't they. I always used to buy Cauldron but the recipe has been "improved" and I don't like them anymore. So I tried Quorn and quite enjoyed them. Quorn mince makes me ill so I was worried they would do the same but they were fine. Lots of flavour and lovely with some pepper sauce.
Tonight is Friday so we're having curry as always. Just a chickpea and mushroom something or other, I'll see which spice blend leaps out of the pantry first. We'll probably have it with quinoa and share a naan.
