Quick and easy Tuna Fish Curry

Hi From Australia 

 Here's my quick and easy recipe for Tuna Fish Curry:

5 tablespoons plain or natural yoghurt 

1 tablespoon lemon juice 

1 tablespoon curry powder 

1 small tin of tuna 

1 cup rice 

basil or parsely to garnish *optional* 

 

Mix the yoghurt, lemon juice and curry powder in a bowl, add the tuna and stir until all mixed in. Set aside. 

 

Cook the rice: Microwave wethod: put 1 cup of rice in a bowl, cover with about 1 or 2 centimetres of water. Put in the microwave on high for 16 minutes. Rice should be cooked after 16 mins. 

 

Serve rice on a plate and top with the tuna curry mixture. Garnish with basil or parsely if desired.

Thank you Barry, great recipe. For some reason I seem to have lots of tins of tuna in my c upboard so I will definitely be trying that out, I never thought of making a curry with it before.

I'm sure your Christmas will be a lot warmer than ours!!! Merry Christmas to you,

Hi Teanna,

Yes, I hope it works well for you. I like to use tuna fish in oil rather than in brine or springwater, the flavour is better somehow.

The lemon juice goes well with the fish and definitely makes the recipe work. Send me a message and let me know how it went for you !

I tried this and it was delicious!!! I can't believe I never thought of using tuna in a curry before, it seems so obvious now!
