Hi ladies,

I made these this morning. Not as filling or as nice as the magic ones but lovely if you don't want to use a healthy extra. I think they're nice as something sweet after dinner or lunch.

All you need is:
1 Egg per pancake(I used 2 eggs)
2-3 Tbsp sweetener (depending on own taste) (recipes seem to vary from 3 teaspoons to 6 tablepoons!)
3-4 Drops of vanilla essence (I didn't have any so missed it out)

First separate the white from the yolk and put into separate bowls. Whisk the egg white until fluffy and add the sweetener. In the other bowl add the vanilla essence then fold the yolk into the egg white
Heat a frying pan with frylight, add the mix and spread as you would a normal pancake after a few mins flip over (But do be careful they are much more delicate than a regular pancake) And then Hey presto scrummy syn free pancakes

All you need to do is add some strawberries or banana whatever takes ya fancy. (I had golden syrup with my at 2.5 syns per tablespoon) I bet they'd be nice with the new chocolate philly too.

I was surprised by how they turned out. A lot of the things that have been tweaked are just too different from the real thing but these weren't bad at all. Once you've got something sweet on top who cares what the underneath tastes like anyway! lol

Hi SS, I still haven't tried the magic pancakes but I made these for breakfast yesterday and both L and I really enjoyed them. I was a bit sceptical how they would turn out, I used an electric whisk and they turned out brilliantly.  I served them with mixed berries and some maple syrup (2.5 syns per tablespoon). Thank you so much for posting, I think these will be a favourite in our house xx
