Banana Cake help

Hi Everyone,

 

I am making a banana cake in a few weeks for a friend at work and need to try to scale up my recipe to fit a 20cm square tin.

I used the following recipe to make cupcakes, but now need to use it to make a bigger cake.

Can anyone help with how I can work out how much of each ingredient to use.

250g Butter
250g Caster Sugar
4 Eggs
250g Plain Flour
4 tsp Baking Powder
4 Small/Medium Bananas (mashed)

How many cupcakes did you make? (roughly?)

Tomorrow (because it's too late tonight!) I'll look in one of my books and see if I can see what they recommend for that size tin for, say, a maderia cake and that will give some idea of how much mixture is needed.

Don't forget that it will probably need to cook a little lower heat for longer.

Will look tomorrow morning!

Hi there,

 

I made 22 cupcakes, but I can't remember if I doubled the mix to make them or if this was the recipe for all 22.

I really should have written it down, but I didn't expect a friend at work to enjoy them so much that they wanted a big cake of the same mix.

I think, looking in my cookbook here you'd probably be fine doubling it!

My Madiera cake recipe (which is not so dissimilar) for a 20cm square tin calls for

450g flour,
350g Marg
350g Caster Sugar
and 6 eggs

Usefully it also say to bake for 1 3/4 to 2 hours on gas 3. The tin should have a double thickness greaseproof paper.

So if it were me I'd double the recipe you've stated above, line the tin and see how it goes!

Add a pinch of cinnamon to the cake, makes it taste really nice
